Citrus, Cashew Nuts and Raisins Salad
Salads are a great way of adding greens into your meals especially when they are quick to make. This one is made with fresh oranges, to make it extra juicy. Some raisins for a kick of sweetness and some roasted cashews for crunchiness. I’ve also made an easy dressing. Apple cider vinegar can be found in your local stores.
125g mixed salad (mine is spinach, lettuce, arugula) - but you can use any.
2 oranges, peeled
1 handful raisins
1 handful roasted cashews
1 big handful mung beans sprouts
1 fresh Fig (optional)
1 tbsp apple cider vinegar
1 tbsp olive oil
3/4 tsp sea salt
1/4 tsp ground black pepper
Start by washing and draining your vegetables. Peel and dice the oranges in one inch sizes. Put all the ingredients in a big bowl, prepare the dressing and then mix it all together until well incorporated. Enjoy!
