Cinnamon Oat Pancakes
Rather than telling you about how busy these days have suddenly become and how sleep deprived I’ve been for the last three days and how summer is slowly coming to an end, let me tell you about these quick pancakes that was my breakfast yesterday. It had to be quick, at the same time, done with care. I threw things into a bowl and mixed them together, then turned them into little flat round things.
1 big banana or two small ones
200ml plant based milk
50g oat flour
1 tsp Physillium husk
1 tbsp ground flax seeds
1 tbsp sesame seeds
Put all ingredients in a large bowl
using a big whisker, mash the bananas. Then start mixing until fluffy.
Heat a non stick pan with 1 tbsp olive oil.
When hot, spoon in some batter and cook 3-4 minutes on one side or until bubbles start appearing then flip over for another 2-3 minutes until golden brown.
Top with apple sause, maple syrup, shredded coconut and dried Rose hip.
